Are ghost kitchens the future of the restaurant industry?

The Covid-19 Pandemic impacted various industries in different ways. One of the industries gravely effected was restaurant and hospitality. Restaurants were forced to close in-person dining to follow state and national regulations, and many were challenged to maintain healthy sales without their previous business model. Without customers able to dine in, some owners moved to a unique revenue concept to streamline overhead costs. The ghost kitchen was born. Ghost kitchens are food preparation operations designed for delivery service only. Multiple ghost kitchens can be set up in a warehouse or commercial kitchen space where chefs prepare the food to order for popular delivery apps such as Uber EatsTM or GrubhubTM. Owners’ costs are decreased without the need for brick-and-mortar locations and serving staff.  

Pros to ghost kitchens 

Ghost kitchens eliminate the need for the higher overhead and staffing requirements of a brick-and-mortar location. Restaurant locations can be expensive to maintain; whether it be the upkeep, staffing, or rent in premium areas. The pandemic forced many of these restaurants to tighten their fiscal budget to weather the storm. Ghost kitchens reduce the fiscal challenges and allow the chefs to focused on to go service. 

 

Cons to ghost kitchens 

Ghost kitchens do not allow a restaurant to promote its unique dining experience. People often go to restaurants for more than just the food, the atmosphere figures heavily into their selection. For example, The Jungle Cafe would be a lot different if there wasn’t a jungle experience to compliment the food. The animals and the jungle decor give the cafe its illustrious and lively feel. Restaurants have three main attractive factors: the atmosphere, the service, and of course the food. Ghost kitchens focus solely on the food, placing more pressure on the kitchen staff. 

The future of ghost kitchens
